The sopressa con il filetto is a premium variant of the traditional Venetian sopressa, a typical cured meat from northern Italy. In this version, a whole pork tenderloin is placed in the center, surrounded by a finely ground mixture of pork meat seasoned with salt, pepper, garlic, and other spices. This salami stands out for its softness and rich flavor, achieving a perfect balance between the lean part of the tenderloin and the fatty part of the filling. It is aged for an extended period, usually between 3 to 6 months, which gives it an intense aroma and an irresistible texture.
